Job Description

Chef de Partie (Full Time)

Every memorable dining experience at Fairmont Hotels and Resorts begins behind the scenes with our Culinary team's commitment to safe, efficient operations and exceptional cuisine. The care and quality you devote to food preparation as Demi Chef de Partie will result in truly spectacular fare that delights our guests.

What You Will Be Doing

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

  • Consistently offer professional, friendly, and proactive guest service while supporting fellow Colleagues
  • Prepare and when required delegates the production of the necessary food items in accordance with standards in a timely and efficient fashion to ensure that there is no interruption to guest service
  • Ensure consistency in the preparation of all food items for a la carte and or buffet menus according to hotel recipes and standards
  • Actively share ideas, opinions, and suggestions in daily shift briefings
  • Have full knowledge of all menu items, daily features, and promotions
  • Ensure that station opening and closing procedures are carried out to standards
  • Operate all kitchen equipment and conduct themselves with safety in mind at all times
  • Ensure that all food products are handled, stored, prepared, and served safely in accordance with hotel and government Food Safety guidelines.
  • Responsible for the day to day operations of their station
  • Ensure a clean and safe working environment, and actively participate in health and safety initiatives
  • Carry out any other tasks as assigned

Physical Aspects of Position (include but are not limited to):

  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 30 lbs
  • Occasional kneeling, pushing, pulling, lifting
  • Occasional ascending or descending ladders, stairs, and ramps

Qualifications

Your experience and skills include:

  • Minimum 6 years cooking experience
  • Experience in a luxury hotel with comparable service and standards is an asset
  • Red Seal Certificate (Journeyman’s papers) or Recognized International Equivalent
  • Valid Food Handler Certificate required
  • Must have experience and be proficient in both a la carte and production cooking
  • Previous supervisory experience
  • Self-motivated, with the ability to make effective decisions
  • Demonstrates initiative, and the ability to work with minimal supervision
  • Ability to maintain high service levels under pressure
  • Ability to consistently stand and walk throughout shift

Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining work authorization documents

Hourly Rate Range: $31.15 - 32.15 CAD Gross per hour
